Did Someone Say Oatmeal Cookies? (Egg Free Style)

When is comes to baking, I ain't much of a fan because majority of the time it are requires the use off eggs ......and I aint much of a egg fan mostly that todays eggs are nolonger as fresh (as before)..... but when it comes to cooking......I seem to do a lot better. Let' just admit it ....We all like to treat ourselves once in a while and today, was one of them day where I wanted to give baking another go and shockingly enough..... I found this amazing recipe online which didn't require eggs, looked really good/came out reallygood.
 
Here' What your going to need to make these babies;
 
1Cup Butter or 1 Cup Margarin | 3/4 Cup Brown Sugar | 1/4 Cup White Sugar (I used Vanilla Sugar By Cake Angels)| 1 Teaspoon Vanilla Extract| 1 1/2 Cup Self Raising Flour | 1 Teaspoon Baking Soda | 2 Cups Quick- Cooking Oat (I used Quakers Oats ) | 1/2 Cup Raisins | 1 1/2 Cups Semi- Sweet Chocolate Chip (I used Milk Chocolate By Fin Carre) 
 After measuring all my ingredients, I want ahead and followed the directions step by step....
 
 
I went ahead and mixed the butter (or margarine), sugars and vanilla extract until its was light and fluffy.

 
I then  added flour and salt as directed and mixed it well 

This is how it should look

....In the meanwhile, I dissolved the baking soda in boiling water and added it to my mixture (It should look as shown on the picture).

 
I then stirred in the rolled oats, raisins and chocolate bars.  

 
At first I used the whisk but I then decided to just use my hands to mix everything together (Make sure your hands are clean and dry)

 
and added a little bit of sunflower oil to make it easier to mix...

This is how is should look like (when you have mixed everything together).
 
 
I molded the dough and used the ungreased cookie sheet.....

 
Baked at 350 degrees F (175 degrees C) for 10-12 minutes.
 
Warning DO NOT OVER COOK (so please keep an eye on them)

 
After all that baking and waiting.....this is the part I never look forward too which is washing up all this mess ¬¬  (lol).
 
 
(All the ingredients I've used today all can be found in Lidl at a very low price.) #ENJOY
